‘Pig & Swig’ with Secret Foodies at Saint George

Last month Saint George were lucky enough to have a visit from the Secret Foodies! Secret Foodies offers a surprise dining experience where the venue and menu is not disclosed to guests until the last minute.

The Secret Foodies were asked that if they could only eat one kind of meat for the rest of their life, what would it be? Their amazing guests answered with pig! James was more than ready for to take on the challenge and did he deliver!

To begin, guests were served with a ‘Bacon me Angry’ cocktail which was accompanied by individual cups of pea and ham soup and smoked ham hock croquettes with grabiche sauce.

For entree, three different pork dishes were served. Crispy pork jowl topped with rhubarb and Chinatown flavours, salad of prosciutto with fresh melon balls and prawn carpaccio with a bacon vinaigrette. The dish was full of flavour, surprise and creativity.

Pot roast spiced pork shoulder with fennel puree and spiced ginger pork jus greeted guests for their mains. The crackling was extremely popular!

To carry the theme through to the end of the evening, James served up smoked bacon creme caramel. Again, very popular among the foodies.
